Ginatang Langka at Baboy (Young jackfruit and Pork in Coconut Milk) a la Kam


I usually eat jackfruit as dessert (usually in turon) but I tried this dish in a Filipino restaurant in Seattle and decided to give it a try. Another yummy coconut milk dish! The sauce is the same as my other coconut milk recipes :)

What you need:
3 cloves garlic, chopped
1 shallot, chopped
small ginger (half of a thumb), chopped
1 tbsp. vegetable oil
1/2 lb pork strips

1 can of young jackfruit in BRINE (not syrup!), sliced
1 can coconut milk
1 tbsp. shrimp paste (or more)
pepper to taste

How it's done:
Heat up a wok and add in the vegetable oil. Saute garlic, ginger and shallots for around 1 minute.

Add in pork and cook until all pink are gone.
Add coconut milk. Let simmer for around 7 minutes on medium heat.
Add in shrimp paste and jackfruit. Let simmer for around 5 more minutes.
Season with pepper to taste.

Serve with rice and sliced bell peppers on top :)
