Ate Anchang's Arroz a la Valenciana


A tribute to one of the people who inspired me to learn how to cook. This is her signature dish (although hers is much better than my quick version).

RIP Ate Anchang, I am sure you will be making awesome dishes in heaven :)

What you need:
3 cups jasmine rice
3 cups coconut milk
1 cup water

1 tbsp. olive oil
2 cloves garlic, shopped
1 shallot, chopped
3 chicken thighs, sliced to small pieces
3 kielbasa sausages, sliced diagonally
pinch of annatto powder

2 potatoes, cut to medium cubes
2 medium carrots, cut to medium cubes
1 red bell pepper, sliced to squares
1 green bell pepper, sliced to squares

1 small can tomato sauce
1/2 cup water
1-2 dried bay leaves

fish sauce
salt and pepper to taste

Here's how you do it:
Ate Anchang's version requires cooking the rice on the wok itself, making the cooked rice more flavorful. I have never tried doing it but will do soon :P

I, on the other hand, used my handy rice cooker to cook the rice in coconut milk and water.

In a wok, heat up the olive oil. Saute garlic, shallots. Add chicken and cook until all pink are gone.
Add in annatto powder and season with salt and pepper. Add in tomato sauce, water and bay leaves.

Then, add sausage, potatoes and carrots. Let simmer on low to medium heat until potatoes and carrots are soft.

Add bell peppers. Season with fish sauce, salt and pepper.

Once rice is done, add the rice in the tomato sauce and mix carefully.
