Ginisang Sitaw at Kalabasa (Long Beans and Squash in Coconut Milk) a la Kam

Quick post on a favorite Filipino coconut milk dish :) I added some crunchy pork belly on top to make it yummier!

What you need:
3 cloves garlic, chopped
1 shallot, chopped
small ginger (half of a thumb), chopped
1 tbsp. vegetable oil

1 bunch long beans, cut around 2 inches long
1 small squash, cubed
1 can coconut milk
1 tbsp. shrimp paste (or more)
pepper to taste

Protein options:
1/2 lb shrimp, peeled
2 strips pork belly - broiled on high for 15-20 minutes

How it's done:
Heat up a wok and add in the vegetable oil. Saute garlic, ginger and shallots for around 1 minute.

Add in squash and coconut milk. Let simmer for around 5 minutes.
Add in long beans and shrimp paste. You can add shrimp at this point if you have it.
Let simmer for around 3 more minutes.
Season with pepper to taste.

Add sliced pork belly. Serve with white rice :)
