Yang Chow Fried Rice

Came up with this recipe because Piano Man loves siomai; and what is best paired with siomai? (other than garlic chili and soy sauce) Yang Chow Fried Rice!

This is just one of my rice recipes, More to come!
I have yet to perfect Lola Anchang's Arroz a la Valenciana.

What You Need:
2 cloves garlic, chopped
3 Cups Cooked Rice (Bahaw)
2 Chinese Sausage (Chorizo Bilbao)
1 Chicken breast, sliced in small cubes
1 carrot, chopped in small cubes
1/2 cup frozen green peas
2 green onions, chopped
1 egg, beaten
1 tbsp. Vegetable Oil

Seasonings:
1 small pack Ginisa Mix or 1 tbsp. Lee Kum Kee Chicken Bouillon Powder
1 tsp. Sesame Oil
1 tsp. Oyster Sauce
1 tsp. Chinese Wine
Dash of Salt and Pepper

Heat up a wok with the oil. Add the garlic saute until it turns light brown and aromatic.
Add chicken breast and Chinese sausage. Cook for 5-7 mins. or until meat is no longer pink.

Add the carrots and green peas, stir and cook for 2 mins.
Add the seasonings, stir and then add the rice. Mix well to separate the grains.
Make a well and then add the beaten egg and green onions in the middle.
Stir egg until cooked. Mix egg with the rice.
Season with salt and pepper.
Serve hot.

Kam's Tips:
  • This recipe is best when made with cold rice.
  • Want a vegetarian option? Remove chicken and chinese sausage and replace with fried tofu.
  • For a seafood option: Substitute chicken with 1/2 cup chopped shrimp or crab meat.
